Strawberry Limoncello Spritzer
It’s cocktail time again! I promise I will be back with some actual food recipes soon. I was gifted a bottles of homemade limoncello and wanted to mix up a little cocktail with it. I made a fresh strawberry simple syrup to add another flavor element and sweetness. Topped it off with sparkling water and it’s ready to go. Try the strawberry simple syrup in place of regular simple syrup in your favorite drink recipes or just add it to sparkling water for a refreshing strawberry soda.
Strawberry Limoncello Spritzer
Strawberry Simple Syrup
- 2 cups sliced strawberries
- 1 vanilla bean split
- ½ cup sugar
- ½ cup water
Puree one cup of strawberries in a blender until liquefied. If need ad a little water. Add strawberry puree to a saucepan with the remaining cup of sliced strawberries along with the vanilla bean, sugar and water. Bring mixture to a boil. Reduce heat and simmer for about 10 minutes until sauce has reduced and thickened slightly. Place strawberry syrup through a fine sieve and let cool.
For the Cocktail
- 2 oz strawberry simple syrup
- 2 oz Limoncello
- Sparkling water
Fill glass with ice and add strawberry syrup and limoncello. Top with sparkling water, garnish with strawberry, take a sip and enjoy.
