Candied bacon, creamy chocolate, and whiskey all rolled into one delicious treat! Your sweetie will appreciate the time and effort spent making these delicious truffles. Just try not to eat them all before you give them away!
Candied Bacon Chocolate Truffles
- 2 thick cut pieces of slab bacon
- brown sugar
- 6 oz milk chocolate
- 1/3 cup cream
- ¼ tsp vanilla
- 4 tbs softened butter
- 2 tbs whiskey/bourbon
To make candied bacon, preheat oven to 400 degrees. Place bacon on a baking sheet and sprinkle with brown sugar. For easier cleanup place bacon on parchment paper. Bake 10-15 minutes until bacon in browned and crispy. Let cool. Finely chop and set aside for ganache.
For ganache, chop chocolate and place in a medium bowl. Heat cream and vanilla in a saucepan until it begins to simmer. Do not boil. Pour warm cream over chocolate and let sit for about five minutes. Whisk chocolate and cream until smooth. Add softened butter and continue to whisk until butter is fully incorporated. Add whiskey and candied bacon. If you would like a stronger whiskey flavor add an additional 1-2 tablespoons. Cover mixture with plastic wrap and refrigerate until cool and firm. This will take about 2 hours.
Once mixture is cooled, use a teaspoon or mellon baller to scoop out ganache. Roll into balls and coat in powdered sugar. You can also roll them in cocoa powder, sprinkles, nuts, or dip them in tempered chocolate. Store truffles in the refrigerator.
*I added a little pink food coloring to my powdered sugar to make it light pink.
