Champagne

Who doesn’t love champagne?! it is absolutely one of my most favorite things in the world so I was so excited when Champagne was first up on the list of class trips. During two days, we had the chance to visit six different champagne houses ranging from small to large. First up was Ulysse Collin. We were greeted by Olivier Collin and taken on a short walk to visit the Les Perrieres plot followed by a visit to the cellar where were able to taste some of the wine currently fermenting directly from the vats.

Lunch began with butternut squash or pumpkin soup with salmon topped with creme fraiche and bacon. Followed by duck breast with a soy glaze a cheese course, and pineapple crumble for dessert. All dishes were paired with Duval-Leroy champagne.

The second day of our trip began at Domaine Jacques Selosse where we met with Anselme Selosse to discuss his unique approach to wine making followed by a tasting.

DSC_1458DSC_1459Our last visit was to Moet and Chandon for a Dom Perignon tour and tasting.

    You made me feel as if I was there with you. But I didn’t get to taste any champagne! Oh.
